Parmigiano and Herb Chicken


1 ½ lb chicken breast tenders

2 large eggs – beaten with ¼ Cup water

2 cups Italian bread crumbs

1 cup parmesan cheese

1 cup flour

salt and pepper



Preheat oven to 350 degrees

Heat ½ in layer of oil in non stick skillet over medium heat

Season chicken tenders with salt and pepper

Place flour in a dish

Beat the 2 eggs and ¼ cup water together in a bowl

In another dish, combine the parmesan cheese and bread crumbs

Coat chicken in flour, then egg and then breading

Place chicken in pan – cook until golden brown on each side. About 3-4 minutes

Transfer to Cookie Sheet – place in preheated oven and cook for another 5 minutes.
